San Antonio Enchiladas

Ingredients
3/4 cup chopped onion
2 tbsp margarine
1 8oz jar mild taco sauce
2 cups cooked cubed chicken
1 tsp chili powder
12 flour tortillas
oil (to soften tortillas)
1 8oz jar Cheez Whiz
1/3 cup pitted ripe olive slices OR 4 oz diced green chiles
You can also substitute canned refried beans for the chicken if you prefer.
Directions
Saute onions in margarine. Reserve 1/4 cup taco sauce. Add remaining sauce,
chicken, and chili powder to onion mixture; heat thoroughly. Dip tortillas
in hot oil and drain. Spoon chicken mixture on each tortilla, roll up
tightly. Place in 13x9 baking dish, seam side down. Top with Cheez Whiz and
olives or chilies. Top with reserved taco sauce. Cover with foil and bake
at
350 degrees for 25 minutes.
