"Here is another good one!!"
Ingredients
1 pkg (19-21 oz) fudge brownie mix (plus ingredients to make brownies)
2 egg whites
1 pkg (14 oz) sweetened flaked coconut
1 can (14 oz) sweetened condensed milk (not evaporated milk)
1 pkg (2.25 oz) sliced almonds
1 square (1 oz) semi-sweet chocolate for baking
1 tsp vegetable oil
Directions
1. Preheat oven to 375 F. Cut a 15-inch circle of Parchment Paper; place on 15" Round Baking Stone. Prepare brownies according to package directions. Pour brownie batter onto parchment paper, spreading into a 14-inch circle. (Do not bake without parchment paper or batter will run off Baking stone while baking). Bake 15-18 minutes or until brownie is set. Do not over bake. Remove to Nonstick Cooling Rack.
2. In clean batter bowl, separate egg whites from egg yolks using egg separator. Fold coconut and sweetened condensed milk into egg whites. Using large spreader, spread coconut mixture over top of brownie to within 1/2" of edge. Sprinkle with almonds. Return to oven and bake 25 minutes or until edges of coconut are deep golden brown. Remove to Nonstick Cooling Rack.
3. Using Food Chopper, finely chop chocolate. Melt chocolate with oil in 1-qt. Covered Micro-Cooker, uncovered, on High 45 seconds, stirring after each 10 second interval, or until chocolate is melted and smooth. Do not overheat.
4. Using Pizza Cutter, cut pizza into serving pieces. Drizzle with melted chocolate using V-shaped cutter. Serve using Mini-Serving Spatula.
(I love the way the recipe calls for a clean batter bowl in step #2, like you would really use a dirty one)!!!!
