Rav'n Ravioli

"This is from the latest Main Dishes Cookbook, it is out of this world..."


Ingredients

1 medium green pepper
1/2 cup onion, chopped
1 tsp. olive oil
1 garlic clove, pressed
1 jar (26-28 oz.) spaghetti sauce
2 packages (9 oz. each) refrigerated ravioli (any flavor)
TIP: One package (25 oz.) frozen ravioli may be substituted. Prepare as recipe directs)
1 1/4 cups water
12 French bread baguette slices (4 oz.)
1/4 cup butter or margarine, melted
4 oz. mozerella cheese, shredded (1 cup)
1 oz. grated Parmesan cheese, grated


Directions

1. Preheat oven to 400 degrees. Chop pepper and onion with FOOD CHOPPER. In GENERATION II 4-QT. CASSEROLE, heat olive oil over medium heat. Add pepper, onion and garlic pressed with the GARLIC PRESS. Cook 2-3 minutes. Stir in spaghetti sauce, ravioli and water. Bring to a boil. Turn off heat.

2. Meanwhile, use SERRATED BREAD KNIFE to cut French bread into 12 slices, 1/2 inch thick. Place butter in 2-QT. COVERED MICRO-COOKER; microwave on HIGH 1 minute or until melted. Add bread slices, tossing to coat evenly.

3. Using NYLON SPOON, spoon half of the ravioli mixture into the OVAL BAKER (DEEP DISH BAKER works for those who don't have the oval one yet) Top with mozerella cheese, shredded with DELUXE CHEESE GRATER, and remaining ravioli mixture.

4. Arrange bread slices, slightly overlapping around edge of BAKER and pressed slightly into ravioli mixture. Grate Parmesan cheese over bread and ravioli mixture. Bake 15 minutes or until ravioli is heated through and bread is crisp and golden.

Yield: 6 servings.
