Praline Wafer Dessert

Ingredients

45 each vanilla wafers
2 cups flaked coconut
2/3 cup pecans; chopped
2/3 cup brown sugar; packed
6 tbsp margarine
1 pkg instant vanilla pudding mix
1 1/2 cups milk
1 cup heavy cream; whipped


Directions

Arrange 21 whole vanilla wafers in bottom of 9" spring pan. Cut a slight portion off each remaining vanilla wafer to form straight edge. Place those wafers, straight edge down, around edge of pan, overlapping them in a clockwise fashion.

Combine coconut, pecans, brown sugar, and margarine in a skillet. Cook over low heat, stirring constantly, until margarine is melted. Continue to cook and stir until mixture browns lightly, about 5 minutes.

Pour onto baking sheet to cool. Break coconut mixture into coarse crumbles. Reserve 1 cup. Sprinkle remaining crumbs over wafer base. Prepare pudding with milk as directed on label. Fold in whipped cream. Turn mixture into pan, spreading gently to the edges of the standing wafers. Sprinkle with reserved crumbs. Chill for 4 hours or overnight. Cut in wedges to serve. Serves 6-8
