Microwave Chicken and Rice

Ingredients

2-3 pounds skinless chicken, cut up
1 tbsp. margarine
1 heaping tsp. of Goya Adobo (spice)
1/2 cup chopped onion
1/4 cup tomato sauce
1 bay leaf
1 chicken bouillon cube (broken up)
1 envelope of sazon con achiote (spice)
1 can of beer (or water)
1 1/2 cup rice


Directions

1. Melt margarine in large microwave pan (about 30 seconds).
2. Add chicken and smother them with the melted margarine. Sort the chicken parts so that the largest ones will be at the sides of the pan. Cover and cook (high) for approx. 10 minutes.
3. Add adobo, chopped onion, tomato sauce, bay leaf, bouillon cube, sazon, beer. Mix well. Cover. and cook for 5 minutes.
4. Add the rice, trying to put it under the chicken parts and liquid. Now cook for about 20 minutes, until dry.
